Del Monaco's unique cooking process will set the new standard in pre-prepared filled pasta. Their equipment was specially designed with custom steam sensors to uphold boiling temps throughout the par-cooking process. This results in a "searing" of the pasta, preserving the integrity of the dough. Furthermore, the ready-to-serve filled pasta eliminates any possibility of error during the cooking process for the customer (i.e. overcooking, undercooking, not enough water and/or salt, etc.). The pasta remain consistent while at the same time saving labor, time and reducing waste.
