- "Hazard Analysis Critical Control Point" (HACCP) system implemented
and practiced to ensure food safety.
- After cooking, sauces and pasta fillings travel through stainless steel
tubing and are packed into 10 lb. bags at 200° F.
- These bags are then placed in our tumbler and chilled to under 40°
F in approximately 30-35 minutes.
